"GIUNCATO": Obtained from heat-treated whole sheep’s milk; semi-cooked, white-straw yellow interior with small sparse eyes. With its pleasant taste, it makes an excellent table cheese for rounding off a meal; if matured longer, it may also be grated. The milk is curdled using kid rennet, whence its distinctive taste. The wheel bears the pattern of the reed baskets in which it is moulded. The rind is of brown colour.
Maturing: 90 days minimum
Ingredients: Sheep milk, kid rennet paste, salt, natural milk ferments

"TINNIAS": traditional Pecorino cheese from Sardinia, obtained from heat-treated whole sheep’s milk, semi-cooked, with soft white interior, compact texture or with small sparse eyes. The rind is thin and smooth, of light brown colour. Its taste, mild and aromatic in the early months, becomes slightly tangier as it matures further. Use as a table cheese, but also for grating when more mature.
Maturing: 60 days minimum
