Product Description:

This oil-mill has been producing the characteristic Umbrian oil since 1785, from 'Moraiolo' 'Frantoio' and 'Leccino' olives, which even now are stripped, from the trees by hand.
And after harvesting, the olives are still crushed by the old method of milling between wheels of granite, which produces an olive-pulp with all its characteristic qualities unaltered.
In the next phase, the water, the husk and the oil are separated by the ancient method of cold-pressing, which, despite the modernization of the firm's machinery, remains unchanged.
The liquid which is extracted, the must, is then further treated by a system of separation and subsequent centrifugation which garantees the elimination of all impurities.
The amber-coloured oil so obtained is, in reality, a noble oil with particular characteristics: opacity, leafgreen colour with golden tints and persistent nuances, and an unmistakable, subtle and delicately fruity flavour. We know that the characteristic Umbrian extra-virgin olive oil is a food so valuable as to be considered irreplaceable in a healthy diet, and it is for this reason that we dedicate the same care and zeal to its production today as our forbears did in times past.
